Atkins Diet Recipes: Low Carb Chocolate Bark

What better use for a HD Camera than to use it for a cooking video, and this just happens to be one of the absolute simplest low carb treats you can make. Today’s recipe is Low Carb Chocolate Covered Peanuts or Chocolate Bark for those still on Induction.

The only difficult thing is finding the Coconut Oil — Super Wal-mart sells a good brand for day to day cooking needs. The Recipe is:
1/4 cup of Coconut Oil
1 packet of Truvia or Artifical Sweetener (liquid Splenda is fine) - **update from recording
1.5 TBS Cocoa Powder
1 oz Peanuts (optional)

Mix together, and spread into lined loaf pan. Freeze for 5-10 minutes or until ready to eat. Makes 4 servings.

Info with Liquid Splenda:
Calories- 178, Fat- 18g, Carbs- 3 (1g Fiber), Protein- 2g
**Truvia Net Carbs would be higher due to the Erythitol

Atkins Diet Recipes: Low Carb Pancakes

Here is my breakfast Low Carb cooking video where I make my favorite low carb pancake recipe. This isn’t Induction friendly due to the Baking mix, but you could substitute some almond flour to make it Induction legal. Here’s the recipe:
* 8oz pkg cream cheese
* 3 eggs
* 3 tsp Splenda or equivalent liquid Splenda
* 1/4 cup Atkins Bake Mix *recipe below
* 1/2 tsp baking powder
* 1/2 tsp vanilla
* 1/4 cup Heavy Cream or buttermilk

Beat cream cheese with mixer until blended smooth. Add the remaining ingredients, and let sit for 5 minutes. Preheat non-stick pan to med/high heat. Spray pan with non stick spray and use 1/4 cup measure per pancake. Yield 10 pancakes.

Total Calories 107, Fat: 10g, Carbs: 1.7g, Protein: 4g

Atkins Diet: Low Carb Fried Chicken

In this cooking video, I detail how to make one of my staples of the diet — low carb fried chicken. You don’t have to give up the joy of fried chicken, and contrary to low fat diets, you can eat the skin too! I have fried chicken at least once a week almost. Chicken has a great amount of protein as well as delicious fat in the skin. I display 2 of the 3 methods that are among the acceptable coatings for chicken or chicken-fried foods (like Country Fried Steaks):

* Parmesan Cheese - Induction friendly
* Carbquik breading
* Crushed Pork Rinds. ** not shown Just run the pork rinds through a food processor to crush the rinds into smaller pieces. You would be surprised by how tasty this is, and how little pork rinds flavor there is remaining. I had intended to show this method as well, but Wal-mart wasn’t selling them anymore.

Here is the recipe for the breading:
* 1 cup of Carbquik flour
* 2 TBS Paprika
* 1 TBS Black Pepper
* Dashes of Cayenne Pepper, Chili Pepper, Garlic Powder, Onion Powder, Poultry Seasoning
