4 mushrooms
8 spears asparagus
2 Tbsp (about) olive oil
Peppers, Pepper
Seasoning to Taste
Total Calories: 230
The more oil, the more calories. I didn’t eat most of the oil (that which didn’t cover the chicken and mushrooms was thrown away).
It’s not the healthiest meal ever (fried) but the calories and carbs are really low, and I’ll be full all night!
Always, I drink at least 16 oz of water as well.
Sometimes I’ll follow this up with a salad but I was just too full this evening

What better use for a HD Camera than to use it for a cooking video, and this just happens to be one of the absolute simplest low carb treats you can make. Today’s recipe is Low Carb Chocolate Covered Peanuts or Chocolate Bark for those still on Induction.
The only difficult thing is finding the Coconut Oil — Super Wal-mart sells a good brand for day to day cooking needs. The Recipe is:
1/4 cup of Coconut Oil
1 packet of Truvia or Artifical Sweetener (liquid Splenda is fine) - **update from recording
1.5 TBS Cocoa Powder
1 oz Peanuts (optional)
Mix together, and spread into lined loaf pan. Freeze for 5-10 minutes or until ready to eat. Makes 4 servings.
Info with Liquid Splenda:
Calories- 178, Fat- 18g, Carbs- 3 (1g Fiber), Protein- 2g
**Truvia Net Carbs would be higher due to the Erythitol

Low Carb Cauliflower Bisque:
1 small onion, diced
2 stalks celery, finely sliced
1 TBS butter
1 Medium cauliflower, chopped
3 cups chicken broth
1/2 cup cream
Salt and pepper

In a large frying pan, saute the onion and celery until translucent and tender. Salt and pepper to taste. Add cauliflower and the broth; bring to boil. Change heat to medium-low for 20-25 minutes. Add Cream. Use a stick blender or blender to liquify the soup until completely smooth and thick. Add salt and pepper, if needed. Optional toppings: Cheddar cheese or real bacon bits.
Makes about 8 servings.

Here is my breakfast Low Carb cooking video where I make my favorite low carb pancake recipe. This isn’t Induction friendly due to the Baking mix, but you could substitute some almond flour to make it Induction legal. Here’s the recipe:
* 8oz pkg cream cheese
* 3 eggs
* 3 tsp Splenda or equivalent liquid Splenda
* 1/4 cup Atkins Bake Mix *recipe below
* 1/2 tsp baking powder
* 1/2 tsp vanilla
* 1/4 cup Heavy Cream or buttermilk
Beat cream cheese with mixer until blended smooth. Add the remaining ingredients, and let sit for 5 minutes. Preheat non-stick pan to med/high heat. Spray pan with non stick spray and use 1/4 cup measure per pancake. Yield 10 pancakes.
